Artichokes Aur May - translated means artichokes cooked with mustard seeds (aur in Sindhi).
I was inspired to dedicate this post for the Sindhi Facebook page which asked readers to come up with some different Sindhi recipes.
Since I was experimenting, I started with half a bag of frozen artichokes. Artichokes make a great vegan substitute for recipes requiring chicken and they are great for your heart and lowering cholesterol.
Ingredients:
1/2 bag of frozen artichokes (Trader Joe's brand)
1 tsp mustard seeds
1/2 tsp cumin seeds (optional)
1/2 tsp turmeric
2 tsp coriander powder
1/2 tsp amchur (dried mango powder)
1-1/2 tbsp virgin coconut oil (Nutiva)
salt to taste
fresh coriander chopped (few sprigs)
