Do you struggle with preparing a meal at home on Friday evenings? My legs could barely carry me home tonight - I had done a lot of running around this week and running up and down the long subway escalators. I was kaput!<br />

Did I forget my vitamins??<br />

I ran out of my go-to-comfort food. Brown rice tortillas and Daiya cheese are my butter and toast. Trader Joe's hasn't had any brown rice tortillas recently - all the snow storms we have been having - people have been grabbing them before I reach there!<br />
<br />
After eating a few corn tortilla chips, dried coconut chips, I knew I had to make something substantial 'cause I wasn't going to survive on that or rice crackers and kimchi sauce!<br />
<br />
Enter the can can dance! I kept eyeing the can of kidney beans while my mouth salivated. "Yes, I want that!" "Nah! Who's going to chop garlic, tomatoes, etc.?" I debated with myself - I'm too tired. <br />
<br />
I gave in - made the kidney beans and have enough energy to write this post.<br />
<br />
Food which you can make fast and yet healthy.<br />
<br />
I heated about 1 tbsp coconut oil in a pan, then threw in 1/2 tsp of roasted cumin seeds and let them sizzle. I added 2 cloves chopped garlic, one chopped tomato, turmeric (1/4 tsp), coriander powder (1 tsp), 1 cardamom, a dash of cayenne pepper, black salt (or sea salt to taste) and let it cook on medium-low.<br />
<br />
I kept mashing the tomatoes with my spatula, then I added 3/4 can of the kidney beans. I didn't add the whole can 'cause I didn't have another tomato to make the gravy! Finally, I added 2 tbsp coconut milk and about 1/4 cup of water. I wanted the gravy to be thick. Cooked on medium-low for a few minutes - until beans were tender and gravy perfecto!<br />
<br />
To make something quick and easy - you can simply add all the ingredients at one time and leave it to simmer or use an instant pot while you go change your clothes or clean up in the kitchen and you will have a filling dish of beans. You can eat it with soft corn tortillas, naan, rice, roti or just by itself. If you add more water, it can turn into a hearty soup!<br />

They sometimes don't feel like going to school and are picky about what they eat. They sleep in a warm, cozy bed surrounded by their favorite dolls and toys. In another part of the world, there are little girls who can't go to school and instead work from 3 a.m. to 11 p.m. washing pots, doing other household chores, and who are lucky enough to eat scraps of food and have a dry ground to sleep on.<br />

Have you seen <i><a href="http://girlrising.com/see-the-film/index.html#watch-girl-rising-at-home" target="_blank">Girl Rising</a></i>? I watched the trailer yesterday and heard excerpts from the book. Tears welled up my eyes. This inspirational film is a must see. Immediately, the MZ Wallace bag I have been eyeing on seemed irrelevant. I was embarrassed of my Amazon "wish list." We live in a materialistic world and desire more each day while in certain parts of the world $5 is a fortune! We live in a free country, we are free of masters, have the ability to receive free education and the power to achieve our dreams. So blessed are we.<br />
<br />
I had the honor of meeting <a href="https://www.ted.com/speakers/shabana_basij_rasikh" target="_blank">Shabana</a> Basij-Rasikh, an Ambassador for <i>Girl Rising </i>and one of CNN's International Women of the Year. Shabana shared stories about how she used to attend a secret school disguised as a boy with her sister when Afghanistan was under Taliban rule and how each day her sister and her used to take different paths to school so that they could avoid the Taliban. This young, fearless and successful leader is the founder of <a href="http://www.sola-afghanistan.org/shabana.html" target="_blank">SOLA </a>- School of Leadership Afghanistan, enabling young Afghans to further their studies abroad and secure jobs back home.<br />

It was my first day at Institute for Integrative Nutrition ("IIN"). Today I had the privilege of going back to school, IIN, for a live event at Avery Fisher Hall! As I entered the Time Warner Building, I started feeling happy and excited! The energy in a room full of 1,000+ health coaches cannot be described, but has to be experienced! Endorphins are released! One just wants to freeze time and stay in the present moment and savor it.</span></span></span><br />

Did you know that chickpeas are a great source of protein? It’s

fresh packet of chickpea (garbanzo) flour, fragrant coriander (cilantro)

have quickly written down this recipe with the ingredients I used as I have
been asked for it by my fellow gluten-free friends. The curry leaves are not
necessary, it’s the first time I used them along with the roasted cumin seeds
and the flavor was amazing! Don’t wait to get the curry leaves to make this. You
basically need the onions and tomatoes and the baking soda and can take it from
there. </span></div>

1 cup of the chickpea flour in a bowl, 1 pinch of baking soda and then add the
water, whisk until the lumps disappear. Start off with ¼ cup of water and
gradually increase to make the consistency more like a pancake mixture – it
shouldn’t be too watery. If you add too much water, simply add a little more of
the flour. </span></div>

bubbles (just as when making pancakes), then you can flip it over. You might need
to add a little bit of oil or brush pan with oil before you cook the other side
so that it is done well and gets crispy.</span></div>

my heart opened the gate to sorrow. Go away sorrow – go away please. Photos of the blackboard from the Ayurveda
classes were gone! Oh
no! The worst was ALL the photos from
the farmers markets were gone – all the potential blogs….no more. No
more sexy looking okra and red as ruby raspberries – all poofed into space. My heart continued to plummet while feelings
of despair continued to taste the air.</span></div>

there and then – post the pictures of the veggies right there and then. Whatever you want to do in life, just do
it or make plans to, there might not be a second chance or going back. Don’t procrastinate - whether it be forgiving or hugging someone, calling a loved one or simply loving yourself and taking that trip to Bali ;) for no one knows what tomorrow holds or when it is our turn to be deleted.</span></div>

He was there promoting his product. Asai-San told me he was in the U.S. for Ming Tsai's cooking show. When I first met Asai-San, the humble gentleman struck me as someone who was more than passionate about the product he was selling. His desire to keep the tradition to prepare the best miso along with his pride that his son will continue the family tradition of over 400 hundred years was heart touching and inspiring. </span></div>

The polite, salt and pepper-haired gentlemen in his traditional garb answered all my questions very patiently. One sip of the rich miso - he won me over. I don't think I could ever go back to drinking regular miso - it's like once you have tasted the best, you only want that. Miso, texture and taste, is like wine, each unique and with a distinct flavor. Hatcho miso is robust and rich. You could feel the good vibrations that it was prepared with. There is no metal in the structure where the miso is made, only wood and stone. The miso is prepared only with salt and soy in a slow procedure that takes two and a half years. The soy is supplied to Asai-San, by his school friend, so he knows the source.</span></div>

The service was to be held at 7:30 p.m., 12 miles from my home. When I reached work, I found out that there was a hurricane alert for our area until 5 p.m. “Well by 5 it should be fine,” I keep assuring myself. At lunch time leaves were blowing everywhere in the City, it started getting dark and even sprinkled. I watched my mind playing a battle between fear and Faith. It was in vivid colors, sharper than the Ipad. Fear, like little goblins in <i>Pac-Man</i>, was chewing up my Faith, my poor <i>Pac-Man</i>!</span><br />

<span style="color: #666666; font-family: "Helvetica Neue", Arial, Helvetica, sans-serif;">I kept checking the weather. The forecast had changed. Oh Dear! Thunderstorms were expected up to 7 p.m.! Deep breaths. I called a friend who lived near the Center and she said it was nice and the storm must have gone away. It wasn’t even raining there. I searched on the Internet for buses to the Center as a backup, but it would take me 2+ hours to get home after the service! Fear was playing games, I remembered the last time I went to the Center, there were thunderstorms and heavy rain and my wipers weren’t working well! I was terrified driving home in the dark late at night. When we don’t have faith in ourselves, we open the door for negative thoughts and fear to fly in.</span><br />

<span style="color: #666666; font-family: "Helvetica Neue", Arial, Helvetica, sans-serif;">Then all of sudden, <i>Pac-Man</i> (Faith) swallowed up the little goblins (fear)! Yay!</span><br />

<span style="color: #666666; font-family: "Helvetica Neue", Arial, Helvetica, sans-serif;">I said, “Yes, I am going to do it – I am so worried about something that might not even happen. I will put on my oils, chant my mantras and drive!”</span><br />

<span style="color: #666666; font-family: "Helvetica Neue", Arial, Helvetica, sans-serif;">As soon as I got home, I grabbed my car key and left. I wanted to get half way to the Center before it got dark or the thundershowers started. High Five!!! <span style="color: purple;"><strong>FAITH! FAITH! FAITH!</strong></span></span><br />

The roads were perfectly clear, people were at home because of the expected inclement weather. I made it in record time ~ no crazy drivers with high beams, no thunderstorms ~ <span style="color: purple;"><strong>MIRACLE!</strong></span></span><br />

1/2 Red Onion<br />
1 Lime<br />
Fresh Dill or Mint<br />
Sea Salt to taste<br />
1 tsp Hot Sesame Oil or Toasted Sesame Oil<br />
1 tsp Coconut Sugar (to your taste)<br />
1/2 jalapeno or chili pepper - optional<br />
2 inch ginger grated<br />

Love using my Kyocera mandoline slicer - one of the best kitchen toys ever! After peeling the mango, slice the mango with the mandoline or very finely with a sharp knife. Do the same with the onion. Watch those nails and knuckles! You can play with the blade settings of the mandoline to create the visual effect you are seeking. <br />
<br />
Squeeze approx 1/3 cup fresh lime juice and mix well with the coconut sugar or other natural sweetener, salt, ginger and sesame oil. Adjust salt and sugar according to taste and sweetness of mango. Since I ran out of the toasted sesame oil and jalapeno, I sub'd with the hot sesame oil, which also gave it a nice kick. Pour dressing over the sliced mango and onion, mix well, garnish with chopped fresh herbs and serve. Natkin suggests chopped cilantro or mint. Salivating over the cookbook and intoxicated by the aroma of the mangoes, I couldn't wait to go to the store to get all the ingredients. Determined and drooling, I prepared the above salad with whatever ingredients I had right there and then and dug in. Thank you Natkin for the wonderful recipe.<br />

Happy Father's Day Everyone! Hope you had an enjoyable day with your loved ones! Here's Cool Daddy! Yes, even though I have crossed the half-century mark, I still lovingly call him "Daddy" or "Papi!" Perhaps, we don't want to grow up and still love that term of endearment which resonates with our special bond with that soul?<br />
<br />
I can never forget driving lessons with Daddy on Kapiolani Boulevard and near Diamond Hill! "Oh! don't forget to pull the hand brake." "Did you turn the tires?" "Ahyaa! (Chinese exclamation) you have to go closer to the curb, not so far! LOL! At 16 "Driving with Daddy" in his prized, green-colored Mustang with manual steering, was quite an adventure! Poor Papi, I can only now imagine what his cortisol level must have been!<br />
<br />
I am ever so grateful I got to spend my college days with him, the ambitious entrepreneur, who was always travelling from one country to another. Recently, my sister, her family and I visited Daddy, who was over excited and full of joy upon seeing us and wanted to do everything to ensure we were comfortable just as he did when we were younger. His heightened happiness erased the pain and suffering of his deteriorated health. The days flew while were there, the airport farewell was the saddest of all. My father, who doesn't walk too far nowadays, insisted on leaving me to the check-in counter. Even at 80+ he wanted to make sure his baby was going to make it safely on the flight. While I was waiting to check in, I watched my father walk slowly towards the exit. My heart was sinking - I was overcome with grief. I left my luggage and immediately called after him, "Daddy, Daddy!" He couldn't hear me as he had misplaced one of his hearing aids. I ran as fast as I could and gave him the tightest squeeze ever! A real big hug -- and said loudly, "I love you Daddy!" After a little kiss on his cheek - I quickly turned away so that he wouldn't see the gush of my tears and nor I his.<br />
<br />
It's so true that as we get older, our values and thoughts change and we embrace each moment we get to spend with a loved one - cherishing it, and praying it isn't our last.<br />
<br />
Enjoy every moment of this special day and please tell your father and/or grandfather you love them not only today but for the rest of the days of your blessed life.<br />

This morning I landed up watching and, of course, sampling the green smoothies the Vitamix rep. was demonstrating at Costco. Feeling inspired, as soon as I got home, I prepared this green smoothie with the fresh organic baby spinach and mangoes I had picked up while I was there:<br />
<br />
1 cup Coconut water<br />
1 cup Organic Baby Spinach<br />
3/4 - 1 Mango cut into 1 inch pieces (can use frozen)<br />
1 Tbsp. Coconut Cream<br />
1 Tbsp. Coconut Flakes (optional)<br />
1 tsp. Flax Seeds (optional)<br />
1 Medjool Date<br />

<b style="background-color: white;"><span style="color: red;"><i>Easy Part:</i></span></b> In Vitamix or strong blender, blend all of the above ingredients. If you want it to taste like a slurpie, add more ice. It's a cold, damp day here today so I just added about 7 ice cubes 'cause I didn't want a very frozen drink. The spinach gave it color and vitality, while the coconut cream gave it character, and the not too ripe mango yielded a pineapple type of sweet and sourness. Yummmm! (Add more mango or coconut cream to your taste.)<br />

<span style="background-color: white;"><span style="color: red;"><b><i>Hard Part:</i></b></span></span> What should we call the concoction? ...."Mangocolada" sounded as if a man had gone colada! Whatever that meant! No, the "man" part didn't fit! You know what I mean. Then my little "idea" cells woke up and said what about "Spinacolada?" Oh, Yes! That sounded much better. So, here's the secret to sneak in greens to the newbie who wants to start introducing more greens in their diet. Sneaky! Sneaky! LOL! The color is vibrant, the taste Yummy*** and this <i><b><span style="color: #274e13;">Spinacolada</span></b></i> has been given +++++ Five Finger Licks! <br />

Shhh! Here's my secret! Chopsticks and a small bowl! You'll eventually get tired of picking up those seeds and grains of rice! It's true the larger the cutlery and plate size, the more you eat! Write with experience.<br />

When I moved to Germany, I was appalled at the size of the plates. They were more like <span style="font-size: large;">PLATTERS</span> not PLATES! The spoon was so <span style="font-size: large;">large</span> that the first time I put it in my mouth, I felt like I was at a dentist's office and had to pry open my mouth wide, really wide. It took time getting used to, after all I had just moved from Hong Kong where I was used to eating with chopsticks, in which I had to barely part my lips. Surely, weight gain was inevitable, along with excellent, hearty food. It was almost impossible to finish every thing on my plat[t]e[r].<br />
<br />
If only I had known then what I know now, put half the food aside to pack up to take home. This way you only eat half 'cause you know when you are engrossed in a juicy conversation or batting eyes at your paramour, you quickly forget how much you are putting on that fork and keep chewing away. Another trick to limit your calories and avoid reaching for digestive aids later! <br />
<br />
Brushing your teeth after each meal is a great deterrent, too! Brush and floss as soon as you finish dinner or any meal; works especially well after dinner. The next time you open the refrigerator to reach for a late night snack after you have brushed and flossed, you'll think twice - 'cause who wants to brush and floss again? Seriously? Yes, you really do need to brush if you are going to dig into the pint of Ben and Jerry's Cherry Garcia or Chocolate Haagen-Daz 'cause you don't want to be sitting in the dentist's office having your cavities filled or a root canal procedure! <br />
<br />
Divas, apply a dark shade of your favorite lipstick when going to an event where there will be a spread of irresistible, gourmet treats. Since you love looking your perfect, gorgeous self, you'll feel less likely to mess up your lips and get that red lipstick smeared, running or all over your teeth.<br />

Couple of days ago, I missed my stop on the subway and landed up on 34th Street. I looked for uptown train signs only to find out that I would have to swipe my card again if I wanted to go back! Uggh! I decided to exit and perhaps go to the meditation center. Upon reaching the street level, I backed out of the meditation center idea 'cause it was couple of avenues away and it had started raining. I quickly noticed that I was only 1/2 a block from the B&H Photo Store. Perfect. The memory chip for my camera had cracked recently and needed to be replaced. So off I went to B&H.</div>

I had heard so much about B&H - expecting it to be a regular camera store was sooo shocked and amazed! I found myself like a little girl lost in the candy store! OMG! Was this Santa Land? Conveyor belts carrying products up and down, so many gadgets, so muchhh to just get yourself lost into. Lighting, Tents, Tripods, Lenses, Cameras and more Cameras. The intention had been to go there only for 2 mins to pick up the SanDisk card.</div>

What a rush of endorphins! I found myself "drooling" at new cameras (as if they were juice-filled candies). Perhaps Amex would send me a <b>gift</b> card for a shopping spree at B&H? This place is amazing - I heart Bloomies, but B&H is like a Macy's filled with electronic gadgets. For a blogger who is constantly clicking photos or shooting videos, this is "Candy Land," and I enjoyed every minute of getting lost in it. </div>

If you ever run out of nut milk or organic milk and don't have time to soak the almonds, fret not for those hemp seeds in your freezer/fridge can come to the rescue. It takes less than a minute to prepare fresh, purely delicious homemade hemp milk.<br />
<br />
1 cup hemp seeds<br />
3 cups filtered water<br />
2 medjool dates (pitted) - optional<br />
pinch salt <br />
1 tsp vanilla extract<br />
<br />
Put all the ingredients in a powerful blender (I use a Vitamix) and let it run for 45 seconds. Skip the dates and salt if you are watching your sugar or sodium in take. If you want it sweeter, add more dates or some coconut/palm sugar. Pour into a glass bottle and store in the refrigerator. For a creamier, thicker consistency, add less water. Consume within 2 days. To prepare chocolate hemp milk, add 2 tablespoons of raw cacao. Enjoy!<br />

Right from that first bite into the hot, gooey, stringy mozzarella on a freshly-baked slice of pizza, we feel as if we are in seventh heaven. Just looking at melted, bubbly cheese makes you salivate. The aroma of oregano and tomato sauce uplifts your spirits. When we eat cheese, casomorphin an opiate-like, feel good chemical which is highly addictive, is released. That's why we want more and more....and even more.<br />

Just as the cheese on the pizza or the rocky road ice-cream, are so comforting and addicting, there are many who break out with acne, aggravate their sinus issues, or experience bloating, gas or other digestive problems, etc. <br />

Going dairy-free is no joke. However, after watching documentaries such as <i>Food Matters</i>, <i>Hungry for Change</i> and learning about what really is in that glass of milk, makes it even harder to digest it. When you feel lighter and your complexion starts to clear up, when your tummy doesn't hurt as much and you don't have to pass gas as often, you are in sync with your body and know you are on the right track to reclaiming your health. There are numerous dairy-free options being introduced into the market each day.<br />

Couple of years ago I was told that I was allergic to casein. (Casein is a protein found in milk.) How was I going to survive? No more cheese, frozen yogurt or chocolate milkshakes? How could that be? Where was I going to get my calcium from?<br />

When I was a little girl, my mom used to force me to drink hot milk every morning before I left for school. Yuck! Gross! In the winter she used to add a raw egg to the hot milk for more protein and to make me stronger to fight the nasty germs so I wouldn't get sick - I could have died before the germs! Why didn't I find out about this allergy when I was younger? Could have been spared the tummy aches, coughing and all the spilled milk! So many children are lactose intolerant.<br />

You can get plenty of calcium from almonds, broccoli, chia and sesame seeds. Definitely better options, true? These days milk is full of hormones, etc. Little girls are reaching puberty at record-breaking ages. What about healthy bones? Daiya Cheese (dairy-free) is my life-saver cheese substitute these days.<br />
Almond and hemp milk are great milk-free options. Doesn't the pitcher of hemp milk look<br />
fresh and inviting? No hormones, just some pure, refreshing protein and micro nutrients. It's super easy to make at home. No more worries about running out of milk.<br />
